Effect of chitosan coating of quaternary ammonium on strawberry preserving was studied.Weight loss rate and the soluble solids content of strawberry were measured.The results indicated that at the condition of room temperature(26~30℃) storage,the preserving effect achieved optimum results when the content of chitosan coating of quaternary ammonium salt is 2%,PH is 5.0 and the soaking time is 60 seconds.Strawberry could be stably stored for 6 days,and weight loss rate was 3.0% and the soluble solids content was 5.2%.
