Abstract:The study was on the extraction of zein by ultrasonic method used corn gluten meal as raw material.The factors of ultrasonic power, extraction temperature, extraction time, ethanol concentration, solid-liquid ratio andthe zein extraction rate were choosed in single factor experiments orthogonal test. The results showed that the opti-mum conditions of extraction were ultrasonic power 500 W, ethanol concentration 75%, extraction temperature 70 ℃, solid-liquid ratio 1: 9, time 1h. The best zein extraction rate was 78.28%.
