Abstract:A new compound beverage of ginseng Jerusalem artichoke was developed with ginseng and Jerusalem artichoke as main raw materials. On the basis of single factor experiment, the formula was optimized by uniform design method, and the best beverage formula was obtained. According to the weight percentage, the extract of ginseng, Jerusalem artichoke, fructose syrup, ice sugar and jujube juice were 17%, 20%, 10.0%, 1.0% and 5.5%, respectively.The beverage prepared according to this formula not only contains ginsenosides, but also contains dietary fiber components. The product has golden color, slightly bitter taste of ginseng and unique flavor of Jerusalem artichoke,sweet and sour, and the taste is the best.
