Abstract:With the progress of agricultural science and technology and people’s requirements for healthy diet,there are many new and characteristic crops in the market. The purple potato and the sweet potato, as the best-selling purple agricultural products, attract many consumers’ attention. The purple potato is not only rich in fiber, but also rich in a natural anti-oxidize active substance: anthocyanin, which is warmly loved by consumers. Purple potato fruits are rich in nutrients and their healthy values are well-known by people in recent years. The article states the processing situation and the researching progress in the field of potato, sweet potato and its derivative products,analyses its developing and the prospect of being used, offers reference opinions for developing the variety of purple potato products and increasing the promotion of the level of industrialization.
